I did it.\u00a0 I went meat-free for my first week in who knows how long.\u00a0 It was actually easier than I thought it would be.\u00a0 A couple of nights we had a couple of meat options for the kids.\u00a0 Meatballs in pasta, and fish last night.\u00a0 I was tempted but resisted.\u00a0 Over the coming weeks, we will continue to reduce the amount of meats our kids eat.\u00a0 They don’t eat much as it is, so it shouldn’t be too difficult.<\/p>\n
So close to it being a vegan week for me.\u00a0 I had a little bit of cheese on my mashed potatoes, and some chocolate treats throughout the week \ud83d\ude42<\/p>\n
My energy levels over the last 9 months have been pretty high.\u00a0 With the switch in my diet over the last week, I still had the same amount of energy.\u00a0 I was able to stick to my normal exercise routines of 5:30 am exercises, runs, and hot yoga.<\/p>\n
The biggest challenge was getting the kids to try something new.\u00a0 I think they did pretty well.\u00a0 They pretty much tried everything.\u00a0 Some things they liked a\u00a0 lot (kale chips and the homemade bean and veggie burgers for sure), while others, not so much.<\/p>\n
What made it work?\u00a0 Well…the cook.\u00a0 My wife Tiffany.
